Ingredients (for 2 people) :
- 2 chicken breasts
- 20 cl coconut milk
- 10 cl sour cream
- Spices : Curry, Indian mix, Cayenne pepper, Ras El Hannout.
- Salt, pepper
Mixture :
- Cut the chicken into little dice.
- Brown it into a frying pan with a little bit of olive oil.
- Turn the chicken bits to make them coated.
- Add the coconut milk, the sour cream, the spices, the salt and the pepper.
- Simmer over low heat, stirring regularly for about 20 to 30 minutes until the coconut milk and the cream form a thicker sauce.
- Serve with rice.
Suggestions : We can add some coconut chips, onions, Paris mushrooms, ginger, and for the more adventurous, pineapple. This recipe can also be adapted with monkfish and prawns.
