This recipe is very convenient to test lots of variations (see suggestions).
Ingredients (for a round cake pan of 18 cm diameter) :
- 150 g dark chocolate
- 3 eggs
- 60 g butter
- 50 g sugar
- 1 packet of vanilla sugar
- 1 tablespoon cornstarch
- Little more, if you want an inflated cake : 1/2 teaspoon baking soda
Mixture :
- Melt chocolate and butter in microwave. Mix until smooth and shiny mixture.
- Mix the agg yolks with the sugar and vanilla sugar.
- Add the melted chocolate and cornstarch while mixing.
- Beat the egg whites.
- Incorporate gently three times chocolate mixture.
- Pour into the buttered cake pan.
- Bake for 20 minutes at 220° C (with a foil on top).
Here I added pecans to the preparation (about 80 grams) and frosting chocolate.
Accompany this cake with vanilla ice cream and a little maple syrup.
For a little more sophisticated cake, do not put baking powder. This will makes a flat cake that serves as a base, and we can ass chocolate macaroons, vanilla or coffee, as weel as cabbage profiteroles.
