The perfect risotto

How to cook the perfect risotto :

Ingredients (for 2) :

  • 700 ml water
  • 150 g risotto rice
  • cream
  • salt

Mixture (arround 35 min) :

  • Pour the rice in a pan of cold water.
  • Add salt.
  • Make the water boil.
  • Then reduce the heat.
  • STIR REGULARLY
  • When there is almost no water left, add 3-4 tablespoons of cream.
  • Turn off the heat and continue to stir until there is no more water (but a kind of creamy coating).

We can add spices, herbs, sauces, or vegetables (onions, celery, leeks,...) in the water at the end of cooking.
Suggestion  : Add a spoon of pesto rosso, Cayenne pepper, parsley and a sprinkling of parmesan.
