Osso Bucco

The Osso Bucco is a calf stew of Italian origin. This dish requires a very long cooking time (like all stews) but worth the wait, believe me !!!


Ingredients (for 2 persons) : 

  • 2 slices of veal shank
  • 2 tomatoes
  • 80 g tomato sauce
  • 1 carrots
  • 1 onion
  • 1 clove garlic
  • Flour
  • Olive oil
  • Parsley
  • Salt, pepper, Cayenne pepper

Preparation :

  • Flour each slice of veal.
  • Peel and cut into slices onion.
  • Brown the veal and onion in a large pan with a little olive oil.
  • Wash and cut into slices tomatoes and carrots.
  • Add them in the pan with a glass of water, tomato sauce, Cayenne pepper, salt, and pepper.
  • Cover and simmer 2 or 3 hours on low heat.
  • Peel and chop garlic. Add to preparing the end of cooking with parsley.
Suggestions : If you find that the sauce is too thin, increase the heat and let reduce by adding two tablespoons of flour.
For a more complete Osso Bucco you can add lemon zest, celery, leek, orange juice, mushrooms of Paris, and mixed anchovy fillet.
